Obituary

Phyllis McCoy Griffin, 91, of Williston, Florida, passed away on April 18, 2026, in hospice care after a long illness. She lived a life defined by faith, service, and family. She loved sunflowers and living life to the fullest with her many travels. Phyllis was born on September 18, 1934, in Hutchinson, Kansas, to Clarence and Minnie King. She had two half-brothers, Albion and Karl King, and two half-sisters, Inez and Helen Cox.

Phyllis graduated from Hutchinson High School in 1952 and from the University of Kansas in 1957 with a degree in Occupational Therapy. On June 9, 1957, she married Donald Lewis McCoy, and they soon moved to Tampa while he completed his internship. A year later, they settled in Williston, where they raised their children and became deeply involved in the community. After Don’s passing in 1986, Phyllis married George Griffin in 1989. Phyllis dedicated much of her life to service. A devoted member of the United Methodist Church, she generously shared her musical talents by playing the organ and piano for many years. She was also a long time member of the Williston Women’s Club, serving as president for two years. Her volunteer work extended to the local library, schools, hospital, and church. She hosted two exchange students, Maria Juffinger from Austria in 1978, and Kelly Richmond from Australia in 1988. She also had a love for sewing and often made items to give to those in need.

Above all, Phyllis cherished her family. She was a loving mother, “Memaw,” and “GG,” and took great joy in the lives of her children, grandchildren, and great-grandchildren.

She was preceded in death by her parents; her half-brothers; her half-sister Inez; her husbands, Dr. Donald McCoy and George Griffin; her son, Kenny McCoy; and her son-in-law, Mike Payne.

She is survived by her half-sister, Helen; her children, Donnie (Laurie), Joey, Carla Payne, Vernon, and Leslie (Jack); her grandchildren, Jared (Brooke), Conner, Savannah, Will, Luke, Michael (Shaina), Kendall (Juliet), Brandon (Lily Ann), Shelby (Kaila), Molly, Madison (Justin), Cameron (Shauna), Casey (Caterina),and Jackson (Sara); and her many beloved great-grandchildren: Aftin, Wesley, Michael III, Henley, Raylee, Myles, Murphy, Weston, Talan, Tatum, Payten, Maxim, Dansbee, Lucy, Emberly, Everett, Skyler, Max, Maverick, Maddock, and Gabriella.

A funeral service will be held at 11:00 a.m. on Thursday, April 30, 2026, at the First Methodist Church in Williston with a meal to follow in the fellowship hall. Pastor Danny Bennett will officiate.

In lieu of flowers, the family requests that donations be made to the First Methodist Church, 213 West Noble Ave., Williston, FL 32696, memo: Phyllis Griffin.

Phyllis will be deeply missed and lovingly remembered by all who knew her.
